Marisol Ortiz grew up behind the counter of her family’s taquería, pressing tortillas before school and learning that a good taco has exactly two jobs: taste like fire, and taste like home. In 2016 she gutted a retired step van, welded in a trompo, and started parking it on the same downtown corner three nights a week.
Nine years later the recipes haven’t changed — the salsa verde is still her grandmother’s, the tortillas are still pressed by hand at every single stop. What changed is the line, which now starts forming twenty minutes before we open the window.
